Salmon with Cucumber and Dill Sauce

I'm always looking for easy weeknight dinners that are preferably healthy and yet still tasty enough for my husband. This salmon dish is definitely one of our "go-to's" for dinner and I would say from start to finish you can have this bad boy on the table in about 20 minutes!

You Will Need:
  • 1 salmon fillet (Roughly 3/4 of a pound)
  • 1 Tbsp honey
  • 1 6oz container of plain fat free yogurt
  • 1/4 cup of diced cucumber
  • 1/2 tsp of dried dill weed
  • 1 tsp lemon juice
  • Salt & Pepper

Here We Go:
Salmon
  • Preheat over to 350 degrees F
  • Use fork to pierce holes in salmon
  • Drizzle salmon with thin layer of honey and lemon juice
  • Salt and pepper to taste
  • Cook salmon for roughly 20 minutes or until flakes with fork

Cucumber and Dill Sauce
  • Empty yogurt into small bowl
  • Finely chop 1/4 cup cucumber and add to bowl

















  • Add 1/4 tsp dill weed to bowl
  • Stir all ingredients together and chill while fish is cooking.

Serves 2
